Tofu 'n Crab Salad

Oh how wonderful!  Chef Azuki and I are having another synchronous moment!  I just read that soy is good for menopausal and perimenopausal women.  I decided to buy some tofu and just like that, Chef Azuki sends me her recipe for this delicious salad that she made for a church event.  Whoa!  Maybe you're in sync with us too?  Do you want a tofu and imitation crab salad tonight?  If so, you've come to right place!  This is a beautiful, delicious, protein-filled salad.  It can be a side salad or a meal on it's own!

Tofu 'n Crab Salad


Ingredients:
6 persian cucumbers or other small cucumber sliced thinly
1 C cherry tomatoes sliced in half
1 16 oz pacakage of imitation crab shredded
1 block firm tofu diced in cubes
1/4 C memmi
1/4 C seasoned rice vinegar
1 tsp onion salt

Directions:
1.  Prepare cucumbers, tomatoes, imitation crab and tofu
2.  Prepare the dressing by whisking together memmi, seasoned rice vinegar and onion salt
3.  Toss all the ingredients and dressing together

A delicious salad any time of the day!

Teriyaki Turkey Meatballs

Chef Azuki must be reading my mind.  I just bought a package of ground turkey and was wondering what to do with it.  Turkey chili, turkey burgers, hmmmm.....  Then, as if by magic, here she came to the rescue with turkey meatballs.  I always worry that ground turkey is a bit dry compared with ground beef, however these meatballs are juicy and delicious!  With the Shoyu (soy sauce) and the panko inside the meatball, a light sauce oozes out, yet all the flavor remains inside.  I have a new favorite!

Teriyaki Turkey Meatballs




1-1 1/2 lbs. of ground turkey meat
1/4 C low sodium shoyu (soy sauce)
1/4 C sugar
1/4 tsp garlic powder
1/4 C panko
Oil to fry

Directions:
1.  Mix together the ground turkey, shoyu, sugar, garlic powder, and panko in a large bowl
2.  Shape into small balls
3. Coat the bottom of a medium pan with oil and fry the meatballs until fully cooked


It's quick and easy!  Asian style meatballs were a hit with Chef Azuki's children. Yours will love it too! I'm adding this recipe to my quick meal repertoire!

Chocolate Dipped Strawberries

Happy Valentine's Day!  A day to spread love to all those around you.  An easy treat that is so delectable is chocolate covered strawberries. Blogger BeaN hates to bake, but she'll make this for the family.   If you melt the chocolate following the microwave instructions, you can have delicious treats in no time and only one bowl to clean.  Then you can have more time to enjoy the evening with your honey!

Chocolate Dipped Strawberries




Ingredients:
1 bag or container of chocolate pellets for dipping fruit
3-4 baskets of strawberries

Directions:
1.  Wash, pat dry and let strawberries continue to dry on paper towels
2.  Follow the microwave directions to melt chocolate using a microwavable bowl
      Sometimes microwaves vary, so start out with less time and increase by small intervals,
      stirring with a fork.
3.  When chocolate is perfectly smooth take it out and dip strawberries, one at a time.
4.  Place on wax paper or parchment paper to dry
5.  When it's finished you can design a platter with the strawberries, even place them in
     small cupcake cups like Chef Azuki did.

The fresh strawberries are a healthy, lighter alternative to cake.  You still get your chocolate rush.
So mix and match, dark chocolate, white chocolate, and milk chocolate,
satisfying everyone's cravings!

Super Wings with Zesty Sauce

Today we are lucky to have Chef Azuki's husband's famous Superbowl chicken wings on our blog.
It's perfect finger food for watching the game and chowing down. Those who prefer just
a little zing can eat it without the sauce and those who like it spicy can drench it.  Serve it with veggies, ranch or blue cheese dressing.  Game On, Let's Go!

Super Wings with Zesty Sauce




Ingredients:
Chicken
1/2 C flour
1/4 tsp paprika
1/4 tsp cayenne pepper
10 chicken wings
Oil to fry

Dipping Sauce
2/3 C hot pepper sauce
1/2 C unsalted butter
1/1/2 T rice vinegar
1/4 tsp Worcestershire Sauce
1/4 tsp cayenne pepper

Directions:
Chicken:
1.  Put the flour, paprika, cayenne pepper in a ziplock back
2.  Cut chicken wings into sections
3.  Place chicken in the bag and shake
4.  Refrigerate for 30 minutes
5.  Microwave the wings for 6-8 min
6.  Fry in 1/2 inch hot oil
7.  Drain on paper towels in a plate

Sauce:
1.  Whisk ingredients in a pot
2.  Heat on medium heat
3.  Remove from heat as soon as it starts to boil
4.  Whisk again and set aside
5.  Serve wings with sauce!

Love getting the hubbies and kids in the kitchen!  It's amazing how doing things together blazes that creativity right up.  The rice vinegar in the sauce is a secret tip!  Flaming good wings for any occasion!
